Seven Seeds Seidrs are make from fruit sourced in the Northwest of the United States, quite far from the Land of Daffodils and Dragons. So, what makes it Welsh in style?

Welsh cider is wholly harvested, pressed and fermented in Wales, with apples that are distinct from those found in nearby England. The flavor characteristics are earthy, apple forward, sometimes honeyed and very frequently unfiltered and wrought of wild fermentation. In 2014 Traditional Welsh Cider was given a Protected Geographical Indication (PGI) to ensure its uniqueness and authenticity. Therefore, Seven Seeds is not Welsh Cider.

However, Seven Seeds, although made in the USA , taps into the tradition and flavor profiles of Wales (and other Celtic Nations), using our own heirloom, bittersweet, bittersharp and estate apples to honor, celebrate and do our very best to bring the style to the American pallet.

Seidr (the Welsh word for cider) dates back to the Norman Conquest of the 12th Century but the drink itself is far more ancient. The Sidrería Astarbe Sagardotegia, a cidery operating in the Basque Country continuously since 1563, asserts that the Ancient Celts brought cider to the Basque country of old, and that the Britons (who became the Welsh) made Cider as early as the Roman era and that the legendary Avalon was the source of its primal orchard.

Seven Seeds has developed a mythos placing the origins of the Heavenly Sup as far back as the Fall of Troy (1200 B.C) and brings history, legend, craftmanship and a great deal of fun to its offerings of very Welsh style ciders that would make Merlin himself proud – and thirsty!

Wales boasts the oldest language in Europe, and the longest continuous uninterrupted, unvanquished culture. The Welsh have never attacked or invaded another People Group (although they struggle to get along with themselves) and have survived the Romans, the Saxons, the Vikings and the Normans. They are still here! And worthy of celebration.
